New Mexico Green Chile Powder
Vegetal and earthy, with a sharp, crisp, up-front heat, New Mexico Green Chile Powder has all the savory flavor of the American Southwest with the pungent intensity of an onion. A combination of New Mexico 6-4 Heritage and Big Jim peppers, this rich blend of pepper flavor comes from cultivars that were developed for their savory attributes. New Mexico 6-4 Heritage, in particular, were bred specifically to deliver a high flavor yield and a traditional New Mexico pepper flavor with a mild heat. The Big Jim cultivar, which also boasts the traditional, vegetal, earthy New Mexico flavor, is what brings the heat to this chile powder. Our New Mexico Green Chile Powder ranges from 3,000 to 5,000 Scoville Heat Units (SHU). This powder is considered mild, but it does have some heat behind it.
The peppers for our New Mexico Green Chile Powder are grown in the Hatch valley region of New Mexico, and this distinction is important. This area is the self-proclaimed chile capital of the world, and the people of the Hatch region go to great lengths to protect their peppers.
