Easy Chicken Curry

Chicken Curry is also known as Curry Chicken and is popular in Eastern Asia, Southern Asia and the Caribbean. This Chicken Curry recipe is easy to make and overflowing with flavor. Your friends and family won't believe it's your homemade curry and will insist that it came from your favorite Indian restaurant.
This basic Chicken Curry can be served over rice or with warm Indian flatbread (known as Chapatis). Best of all this curry is fresher tasting and much healthier than packaged curry pastes or sauces.

We served this curry dish over steamed brown basamti rice, but you could also serve this with stir fried or steamed spinach or kale or a small cucumber salad.

Directions:
- Heat oil in a large skillet add onion and sauté over medium heat until translucent, about 5 minutes.
- Add garlic and cook 1 minute.
- Sprinkle onions and garlic with 1 teaspoon of the curry powder and cook for 1-2 more minutes.
- Lightly season chicken with salt and pepper and remaining curry powder.
- Remove onions from skillet and set aside.
- Add chicken to skillet and cook for about 3 minutes on each side and remove from skillet.
- Return onions to the skillet and add sour cream, stirring constantly until mixture thickens.
- Return chicken to skillet and continue to cook until chicken is tender, turning once.
- Add asparagus a few minutes before chicken is done.
- Garnish with cilantro.
