Sausages came into being about 4,000 years ago, in Mesopotamia, the Cradle of Civilization. A combination of spices and bits of offal and meat scraps, sausage got its name from “sal”—salt—and was a means of preserving food before the age of refrigeration. Sausages can be made from an enormous variety of meats and spices, and are usually incredibly reflective of regional preferences. We developed this array of small-batch blends with classic sausage flavors in mind, and we have individual, sausage-friendly spices available if you want to create your own signature flavor.
