Fennel is a uniquely flavored spice which is excellent in both cooking and baking. Fennel’s volatile oil quickly dissipates once completely ground, so Cracked Fennel is a compromise of releasing some flavor from the whole seed without completely grinding it. As with most spices, ground provides a more even flavor distribution, but the long thin fennel seeds might be an unpleasant texture if eaten whole. Fennel Pollen is a beautiful spice that has that distinctive anise-like scent of fennel seed but also a sweetness and some light citrus notes that make just a small amount a masterpiece in baking.
