Steak Seasonings and Rubs![]() Too many backyard grill masters there is nothing better than the taste of steak served hot off the grill. I know of more than a handful of family and friends that grill their steaks year round and they live in the north eastern region of the US. Now before I go into seasonings and rubs I want to be sure to let you in a one of the most important secrets to cooking a great steak – before placing on the grill your raw steaks should be at room temperature. A cold steak, pulled straight from the refrigerator will quickly caramelize and burn on the outside when placed on a hot grill, while the center of the steak will be raw and still be cold. So be sure to take those steaks out early, season them and then let them sit on a plate on the kitchen counter while you clean and heat your grill or prepare your side dishes. Steak Seasonings – these are typically used to bring out the natural flavor of the steak. For best results apply your steak seasoning before cooking. We recommend that you lightly sprinkle both sides of the steak for an even taste. Steak Rubs – these are used to add surface texture and flavor to your steak. Steak Rubs tend to be applied much more liberally than steak seasonings. Helpful hint: before adding the rub, brush your steaks with olive oil. Shake the rub onto the steak and pat it in with your hand. Be sure to coast both sides evenly. We like to add the rub to our steaks for at least an hour prior to grilling. Steak Marinades – used on tougher cuts of meat to tenderize and add some flavor. Marinades usually are acidic based, which tenderizes these tougher cuts of meat. A simple marinate is a vinaigrette salad dressing. Place your steaks in large zip-lock bag with ½ cup of marinade per steak. Place the bag in the fridge and flip after 30 minutes to ensure an even coating. Help hint: don’t over marinate as this makes your steak mushy. Our rule of thumb is no more than one hour. |
