Greek Catfish in Foil
4 6 ounce catfish fillets 1/2 teaspoon Greek Seasoning 1/4 teaspoon Granulated Garlic 1 lemon sliced into 8 1/8 inch slices 1 small onions thinly sliced and separated into rings 2 thinly sliced small zucchini 1 cup grape tomatoes cut in half 8 Kalamata olives pitted and coarsely chopped 4 teaspoon olive oil divided Directions: 1. Preheat oven to 450° F 2. Cut 4 18 x 12–inch rectangles of foil 3. Place 1 fillet on each sheet 4. Sprinkle each fillet evenly with Greek seasoning and garlic 5. Layer lemon slices and next 4 ingredients evenly over fillets 6. Drizzle 1 teaspoon olive oil over each fillet 7. Fold foil in half over each fillet to form a packet 8. Crimp edges to seal 9. Place foil packets on a baking sheet 10. Bake at 450° F for 18 minutes or until fish flakes easily when tested with a fork 11.
