Yogurt Bran Muffins
1 cup original bran cereal 2 slightly beaten egg whites 1/4 cup vegetable oil 2 6 ounce containers fat free French vanilla yogurt 1 1/2 all purpose flour 1/3 cup packed brown sugar 11/4 teaspoons baking soda 1/2 teaspoon Sea Salt 1/2 cup fresh blueberries Directions: 1. Heat oven to 400° F 2. Grease bottom of each muffin cup with shortening 3. Place cereal in sealable storage plastic bag 4. Seal bag and crush with rolling pin 5. In medium bowl stir together egg whites, oil and yogurt 6. Add cereal, flour, brown sugar, baking soda and salt 7. Stir until dry ingredients are moistened 8. Gently stir in berries 9. Divide batter evenly into muffin cups about 3/4 full 10. Bake 18 to 20 minutes or until golden brown 11.
