Quiche Lorraine
3 large eggs 1 1/2 cups low-fat milk 1 teaspoon flour Sea Salt to taste Ground Black Pepper Medium Grind to taste Pinch Nutmeg Powder 2 teaspoons olive oil 1/2 finely chopped medium yellow onion 2 large potatoes, about 1 1/2 pounds, thinly sliced 1/4 cup grated Gruyere cheese 1/4 cup Parmesan cheese 4 slices Canadian bacon Directions: 1. Preheat the oven to 325º F 2. Whisk eggs, milk and flour together in a mixing bowl 3. Season with salt, pepper and nutmeg and set aside 4. In a large, ovenproof, nonstick skillet over medium heat, heat 1 teaspoon olive oil 5. Add onion and cook until soft and translucent 6. Transfer the onions to a strainer and drain off excess liquid 7. Heat the remaining oil in the same pan over medium heat 8. Arrange the potato slices by overlapping them on the bottom and sides of the pan 9. Leave no holes with slices of potato and sprinkle with salt and pepper 10. Cook until potatoes begin to turn golden brown on the edges, about 10 minutes 11. Remove from heat 12. Sprinkle the cheese over the potatoes 13. Cover the cheese with the cooked onions and Canadian bacon 14. Pour the egg mixture into the pan and place the pan in the oven 15.
