Ham Spinach and Cheese Brunch Casserole
4 large eggs 4 large egg whites 1 cup nonfat milk 2 tablespoons brown mustard 1 teaspoon chopped Rosemary Leaf 1/4 teaspoon Cracked Black Pepper 5 cups chopped wilted spinach 4 cups whole-grain bread crusts removed cut into 1-inch cubes 1 cup diced ham steak 1/2 cup chopped jarred roasted red peppers 3/4 cup shredded Swiss cheese Directions: 1. Preheat oven to 375°F 2. Coat a 7-by-11-inch glass baking dish with cooking spray 3. In a medium bowl whisk eggs, egg whites and milk 4. Add mustard, rosemary and pepper whisk to combine 5. In a large bowl toss spinach, bread, ham and roasted red peppers 6. Add egg mixture toss well to coat 7. Transfer to prepared baking dish and push down to compact 8. Cover with foil 9. Bake 45 minutes or until the custard has set 10. Uncover sprinkle with cheese and continue baking 15 to 20 minutes or until the pudding is puffed and golden on top 11.
