Asparagus and Green Onion Frittata
8 large eggs 1/2 cup whole milk 1/8 teaspoon Ground Black Pepper Coarse Grind 3/4 teaspoon Sea Salt 12 ounces trimmed asparagus 1 tablespoon butter 1 bunch chopped green onions 2 ounces low fat cream cheese Directions: 1. Preheat oven to 375º F 2. Whisk eggs, milk, pepper and 1/2 teaspoon salt in a bowl until blended and set aside 3. Cut asparagus into 1-inch pieces 4. In non-stick 10 inch skillet with oven safe handles melt butter over medium heat 5. Add asparagus and cook for about 6 minutes stirring often 6. Stir in green onions and cook 2-3 more minutes 7. Reduce heat to medium-low and pour egg mixture over vegetables 8. Drop small teaspoonfuls of cream cheese on top of the egg mixture 9. Cook 3 minutes without stirring or until eggs begin to set around edges 10. Place skillet in oven and bake 10-12 minutes or until frittata is set and knife in center comes out clean 11.
