Shrimp Nachos
1 cup mango, seeded, peeled and chopped 1 medium chopped red sweet pepper 2 1/2 tablespoons finely chopped red onion 1/8 teaspoon Red Pepper Flakes 1 seeded and finely chopped fresh jalapeño chile pepper 2 tablespoons packed brown sugar 2 tablespoon Jamaican Jerk Seasoning 1 pound peeled deveined uncooked shrimp Nonstick cooking spray 8 cups tortilla chips 4 oz shredded Monterey Jack cheese with jalapeño peppers Cracked Black Pepper to taste Directions: 1. Preheat broiler 2. In a bowl stir in mango, sweet pepper, onion, red pepper flakes and chile pepper and set aside 3. In a large bowl stir together brown sugar and jerk seasoning 4. Add shrimp and toss to coat 5. Coat a large skillet with cooking spray 6. Heat over medium-high heat 7. Add shrimp cook 1 to 2 minutes each side or until shrimp are opaque 8. Remove and set aside 9. Spread tortilla chips on a baking sheet 10. Top with shrimp and salsa 11. Sprinkle with cheese 12.
