Low Fat Spinach Dip with Artichokes
4 cups lightly packed fresh baby spinach leaves 1 8 oz package low fat cream cheese room temperature 1/4 cup low fat mayonnaise 4 tablespoons shredded Parmesan cheese 1/4 cup low fat milk 1/4 cup Garlic Flakes 1 teaspoon Sweet Basil 1 14 oz can artichoke hearts drained and chopped Sliced Baguette Cooking spray Directions: 1. Heat oven to 350°F 2. Spray 1-quart shallow glass baking dish with cooking spray 3. Place spinach in 2-quart microwavable casserole and add 1/4 cup water 4. Cover and microwave on High 2 minutes 5. Drain well, pressing spinach with paper towels to remove excess liquid 6. Chop spinach 7. In large bowl work cream cheese with spoon until smooth 8. Blend in mayonnaise, 3 tablespoons of the Parmesan cheese, the milk, garlic and basil until well combined 9. Stir in spinach and artichokes 10. Spread evenly in baking dish 11. Sprinkle with remaining tablespoon cheese 12. Bake 25 minutes or until thoroughly heated 13.
