Tasty Open Faced Tuna Melt
12 ounces canned chunk light tuna, drained 2 tablespoons minced medium shallot 2 tablespoons low-fat mayonnaise 1 tablespoon lemon juice 1/8 teaspoon Lemon Peel 1 tablespoon minced Parsley 1/8 teaspoon Sea Salt Hot sauce to taste Cracked Black Pepper to taste 4 slices toasted whole-wheat bread 2 sliced tomatoes 1/2 cup shredded sharp Cheddar cheese Directions: 1. Preheat broiler 2. Combine tuna, shallot, mayonnaise, lemon juice, lemon peel, parsley, salt, hot sauce and pepper in a medium bowl 3. Spread 1/4 cup of the tuna mixture on each slice of toast 4. Top with tomato slices and 2 tablespoons cheese 5.
