Grilled Italian Bread with Tomatoes
1 loaf crusty Italian bread cut into 1/2-inch slices 6 crushed garlic cloves 1/3 cup olive oil 6 seeded and diced tomatoes Sea Salt to taste Cracked Black Pepper to taste 1 bunch shredded fresh basil Directions: 1. Set oven to broil 2. Broil the bread slices until they are browned and crispy on each side 3. Remove the bread from oven and rub each piece with the raw, crushed garlic cloves 4. Arrange the bread slices on a platter and brush each with some of the olive oil 5. In a large bowl, toss the tomatoes with the salt, pepper and any remaining olive oil 6. Spoon some of the tomatoes over each slice of bread 7. Drizzle the remaining olive oil over the bread slices and sprinkle the basil and serve immediately Serves: 8 |
