Spicy Onion Dip
4 tablespoons olive oil 7 cups chopped red onion 2 teaspoons Sea Salt 1/2 teaspoons Cracked Black Pepper 6 cloves minced garlic 1/2 cup dry white wine 2- 8-oz packages cream cheese, at room temperature 2 cups sour cream 2 teaspoons Worcestershire sauce 1/2 teaspoons Cayenne Pepper Medium Heat 1/4 cup Dried Chives Directions: 1. Warm olive oil in a large skillet over medium heat 2. Add onion, 1/2 tsp salt and black pepper 3. Sauté while stirring, until onion begins to soften, about 3 minutes 4. Add garlic turn heat down to medium-low and continue to cook slowly, stirring, until onion begins to brown, about 10 minutes 5. Turn heat to simmer and cook about 15 minutes more 6. Onion should be brown and extremely tender 7. Add wine to pan and cook, stirring occasionally, until liquid has evaporated and all the brown bits on the bottom of the pan are mixed into the onions 8. Remove from heat and let cool 9. In a serving bowl, mix cooked onion, cream cheese, sour cream, Worcestershire sauce, the remaining 1/2 tsp. salt, cayenne and chives until well mixed 10.
