Tellicherry Peppercorns Goat Cheese Burgers
1-11 ounce goat cheese log 3 tablespoons cracked Tellicherry Peppercorns 1 lb lean ground beef 12 ea. mini brioche rolls (split in half) 4 ea. plum tomatoes Sea Salt to taste Ground Black Pepper Medium Grind to taste 1 bunch watercress 1 tablespoon olive oil Directions: 1. Sprinkle cracked peppercorns on parchment paper and roll the goat log in the peppercorns to evenly cover 2. Refrigerate 3. With a large spoon separate the ground beef into small portions and hand form the burgers 4. Preheat a grill to high 5. Slice the plum tomatoes in 1/2 inch slices set aside 6. Slice the goat log in 1/2 inch slices place on a cookie sheet 7. Refrigerate 8. Season the burgers with salt and pepper and grill for 2 minutes on each side 9. Warm the rolls 10.
