Three Cheese Mac and Cheese
4 ounces whole wheat elbow macaroni 4 ounces elbow macaroni 2 tablespoons butter 2 tablespoons flour 1/2 teaspoon Yellow Mustard Seed Powder 1/2 teaspoon Domestic Paprika 1/2 teaspoon Garlic Powder 1 1/2 cups milk 3 ounces shredded cheddar cheese 2 ounces brie cheese, cut into cubes 1 ounce shredded parmesan cheese Sea Salt to taste Cracked Black Pepper to taste Directions: 1. Boil water in a large pot 2. Add salt and a drop of olive oil 3. Add both macaronis boil for 9 minutes 4. Drain 5. Melt butter over medium high heat in a sauce pan 6. Add flour and spices, whisking to coat particles in butter 7. Continue whisking and cook for about a minute or two or until it comes together as a paste 8. Pour milk in a steady stream while whisking constantly 9. Continue whisking until the mixture is smooth with no lumps of paste 10. Let this come to a boil and thicken 11. Put heat on simmer 12. Start adding the cheese in bit by bit letting cheese melt before adding the next bits 13. Season with salt and pepper to taste 14. Turn heat off 15.
