Tropical Grilled Pork Chops
1 clove garlic, minced 1 teaspoon Sweet Chili Powder 1/4 teaspoon Cayenne Pepper Medium Heat 1 Organic Cardamom Pod 1/2 teaspoon water, or as needed 1 teaspoon vegetable oil 1/4 cup rice wine vinegar 1/2 cup sugar 1 mango - peeled, seeded and chopped 1/4 teaspoon Sea Salt 1/2 teaspoon Coriander Seed Powder 2 teaspoons lemon juice 1 fresh minced jalapeno pepper 1 1/2 cups unsweetened applesauce 3 pineapple rings, chopped 1 pinch Ground White Pepper 1/3 cup soy sauce 1/3 cup rice wine vinegar 6 pork chops Directions: 1. With a mortar and pestle, mash together the garlic, chili powder, coriander, cayenne and cardamom seeds 2. Mix in small amount of water to form a paste 3. Heat oil in a saucepan over medium heat 4. Stir in spice paste and cook until it bubbles, about 30 seconds 5. Stir in vinegar and simmer for 2 minutes 6. Stir in sugar until it dissolves 7. Mix in mango, salt, cilantro, lemon juice and jalapeno and simmer 20 minutes 8. Stir in applesauce and pineapple simmer 10 minutes 9. Season with white pepper 10. Place in a glass bowl, cover and refrigerate until ready to use 11. To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar 12. Place pork chops in a large sealable plastic bag and pour marinade over chops 13. Seal tightly and place in the refrigerator for 1 hour 14. Prepare grill for medium-high heat 15. Drain marinade from bag and heat in a saucepan until boiling 16. Lightly oil grill grate and place pork chops on the hot grill 17. Cook 5 minutes on each side occasionally baste with the boiled marinade 18. Warm remaining salsa over medium-low heat 19.
