Spicy Black Bean Chili

Try this unique take on a classic chili recipe. We used dried black beans for this dish as we've found working with dry beans to not only be tastier but also a bit cheaper (now you can not beat that combination). There isn't that much additional work involved just soak over night. Slow cooking these for 1-1/2 hours really fuses all the flavors together.

This was a weekend meal as it wasn't going to be one of our quick and easy meals but if you are in a hurry on a weekend you could easily use canned black beans. Just make sure they are low sodium so you don't add more salt to the recipe. 

Chili is a delicious meal on a cold Winter day.  And why is it that chili always seems to taste better as a leftover. We used the leftovers and topped our scrambled eggs with them. We also used these leftovers over cooked macaroni or some favorite pasta or cornbread.  This is good stuff and will really warm you up!

Spicy Black Bean Chili

Ingredients:

  • 2 cups dried black beans
  • 8 cups water
  • 2 cups tomato sauce
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 6 tablespoons tomato paste
  • 2 tablespoons lime juice
  • 2 tablespoons wine vinegar
  • 1 cup chopped celery
  • 1 whole jalapeno chili pepper, seeds removed and chopped
  • 2 tablespoons Granulated Garlic
  • 2 teaspoons Ground Cumin
  • 2 teaspoons New Mexico Chili Powder
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Cracked Black Pepper
  • 2 tablespoon chopped cilantro leaves
  • Low fat cheddar cheese (about 1 Tablespoon per serving)

Directions:

  1. Wash beans and place in a large pot cover with water and soak overnight
  2. Drain beans and place in a large Dutch oven
  3. Add 8 cups water to beans and bring to a boil
  4. Simmer for 1 1/2 hours
  5. Add all remaining ingredients except cilantro
  6. Cook for 30 minutes than add cilantro
  7. Simmer for another 45 minutes until beans are soft
  8. Serve with about 1 Tablespoon of the cheddar cheese for a garnish
