Pan Seared Cod with Grains of Paradise
3/4 lb cod fish fillet, cut into 2 pieces A pinch of Sea Salt 1 tablespoon peanut oil Olive Oil 1/4 teaspoon coarsely ground Grains of Paradise 1 lemon, halved, for sprinkling Directions: 1. Preheat the oven to 450° 2. Place a medium iron skillet over medium high heat 3. Season cod on both sides with salt 4. When skillet is hot add peanut oil 5. Place cod in skillet 6. Saute until crispy and golden brown 7. Turn cod saute for one minute 8. Transfer to oven to finish cooking for 2-3 minutes 9. Place on serving plates and drizzle with olive oil and sprinkle grains of paradise on top 10. Squeeze a little lemon juice over fish Serves: 2 Calories: 200 Cholesterol: 73mg Carbs: 0 |
