Easy Peppermint Snowball Cookies
2 cups softened butter 1 cup powdered sugar 1 1/2 tsp peppermint extract 3 1/2 cups all purpose flour 8 oz white chocolate chips 1 cup sweetened shredded coconut Directions: 1. Cream together butter and powdered sugar in a large mixing bowl 2. Add peppermint extract 3. Gradually add in flour ½ cup at a time until blended 4. Refrigerate for 2-3 hours 5. Preheat oven to 350 degrees F 6. Roll out dough into 1” balls 7. Place dough on baking sheet and bake at 15-20 minutes or until golden brown 8. Place on a wire rack to cool 9. Add white chocolate chips in a microwavable bowl and microwave on high for 30 seconds 10. Stir and then return to the microwave at 15 second intervals, stirring in between, until melted 11. Dip each cooled cookie into the white chocolate to coat, then roll in shredded coconut 12. Let sit until chocolate has set Serves: Makes 48 cookies |
