Sugar Free Oatmeal Cookies
1/3 cup unsweetened peanut butter 2 ripe bananas (overripe is fine) 1 teaspoon Vanilla Extract 2 tablespoons unsweetened soy milk 2 tbsp maple syrup 2 1/2 cups quick cooking or rolled oatmeal Pinch Korintje Cinnamon Powder 1/4 cup flour Directions: 1. In a large bowl, mash bananas with a fork until smooth 2. Add peanut butter, soy milk, vanilla and maple syrup and mix well 3. Add remaining ingredients and stir until well combined 4. Drop spoonfuls of dough onto an ungreased cookie sheet and bake at 350 degrees 13-16 minutes or until cookies are golden brown |
