Also known as Anaheim Chiles, California Chile Peppers, Magdalena, or chile seco del norte. This is a very mild chile coming in at 1-2 on the heat scale (of 1-10 with 10 being the hottest). They are just a bit hotter than a bell pepper and are most commonly used in sauces, tamales, soups and stews.
When fresh off the vine this is known as an Anaheim Chile but when it is dried it becomes a California Chile. California chiles are a darker, deeper red than their cousins the New Mexico chile which is a brighter more glossy red color. Their flavor profile is mildly pungent. There are approximately 4 chiles per ounce.
