Macadamia Crusted Salmon 2 salmon steaks (1 inch thick) 1/4 teaspoon Sea Salt 1/4 teaspoon Cracked Black Pepper 1 egg white 1/2 cup chopped macadamia nuts 2 tablespoons vegetable oil 2 tablespoons butter 2 tablespoons minced fresh parsley Pinch of Lemon Peel 1 teaspoon lemon juice Hot cooked rice Directions: 1. Sprinkle fish with salt and pepper 2. In a small bowl, whisk egg white until frothy 3. Dip fish in egg white 4. Next coat fish with nuts and gently pat nut mixture onto fish 5. Set skillet over medium heat and warm the oil 6. Add fish and cook 7-8 minutes on each side or until fish flakes easily with a fork 7. Drizzle parsley and lemon juice over fish 8. Melt butter and stir into skillet 9. Serve with hot rice Serves: 2 |
