Baked Horseradish Salmon
I love salmon - grilled, baked, cooked in a pan - it doesn't matter - I love salmon. This dish has a bit of a bite from the horseradish, but we served it with a sweet carrot salad for a perfect combination of sweet and spicy. You could also make this dish on the grill or stove top instead of the oven - any way you prepare it - be prepared to enjoy it.
This baked salmon recipe is low in sodium while being a good source of protein and packed with the nutrients - Vitamins B6 and B12, as well as selenium and phosphorus. Salmon of course is also an excellent source of Omega-3 and Omega-6 fatty acids.

Ingredients:
Directions:
- Place salmon skin side down in an 11 x 7 x 2-inch baking dish coated with nonstick cooking spray
- In a small bowl combine the horseradish powder and water, mix to a paste consistency.
- To the horseradish mixture add the butter, lemon juice, garlic powder and pepper
- Spread mix over both sides of salmon
- Preheat oven to 375º F
- Bake uncovered at for 20 to 25 minutes or until fish flakes easily with a fork
