Pulled Pork with Slow Cooker
1 medium chopped onion 1/2 cup ketchup 1/3 cup cider vinegar 1/4 cup packed brown sugar 1/4 cup tomato paste 2 tablespoons Sweet Spanish Paprika 2 tablespoons Worcestershire sauce 2 tablespoons Yellow Mustard Seed Powder 1 1/2 teaspoons Sea Salt 1 1/4 teaspoons Cracked Black Pepper 4 pounds boneless Boston butt pork roast cut into 4 pieces 12 soft warmed sandwich buns Dill pickles (optional) Potato chips (optional) Directions: 1. In 4 1/2- to 6-quart slow-cooker pot stir onion, ketchup, vinegar, brown sugar, tomato paste, paprika, Worcestershire, mustard, salt and pepper until combined 2. Add pork to sauce mixture and turn to coat well with sauce 3. Cover slow cooker with lid and cook pork mixture on low setting 8 to 10 hours or until pork is very tender 4. Transfer pork to large bowl 5. Turn setting on slow cooker to high cover and heat sauce to boiling to thicken 6. Allow meat to cool to the touch 7. Using 2 forks and fingers and pull pork into shreds 8. Return shredded pork to slow cooker and mix with sauce to combine 9. Cover slow cooker and heat through on high setting 10. Serve hot on buns or rolls with hot sauce on the side Serves: 9-10 |
