Baked Rubbed Pulled Pork
Kansas City BBQ Rub 1 5 - 7 pound Boston butt pork roast 12 hamburger buns 1 pound peppery coleslaw Pickle spears Spicy BBQ Sauce: 1 cup ketchup 1/4 cup packed brown sugar 1/4 cup vinegar 3 tablespoons butter 1/3 cup lemon juice 1 tablespoon Worcestershire sauce 1 tablespoon Yellow Mustard Seed Powder 1 teaspoon Onion Powder 1/2 teaspoon Celery Seed 1/2 teaspoon liquid hot pepper Directions: 1. Rub the rub all over the pork cover and marinate for at least 1 hour or overnight in the refrigerator (we recommend 1 teaspoon of rub for every pound of meat) 2. Preheat the oven to 300º F 3. Put the pork in a roasting pan and bake for about 6 hours or until the pork is falling apart and is easily shredded with a fork and the thermometer registers 170 degrees F 4. Remove the pork roast from the oven and transfer to a large platter 5. Allow the meat to rest for about 10 minutes 6. Using 2 forks, shred the pork by steadying the meat with 1 fork and pulling it away with the other 7. Combine all ingredients for the spicy BBQ Sauce in a sauce pan 8. Simmer over medium heat for 15 minutes 9. Reserve half of sauce for basting and half for dipping 10.To serve, spoon the pulled pork mixture onto the bottom 1/2 of the hamburger bun, and top with the spicy slaw and serve with pickle spears and the remaining sauce on the side Serves: 12 |
