Grilled Tilapia with Tomato Basil Relish
4 - 6 oz tilapia filets 3 medium red onions 4 cups cherry tomatoes 2 lemons 2 cups of fresh basil 1 cup of pine nuts 1/3 cup extra virgin olive oil 4 tbsp. sweet balsamic vinegar Sea Salt to taste Cracked Black Pepper to taste Directions: 1. Set grill to medium high heat 2. Slice tomatoes in half 3. Slice basil into 1 inch strips 4. In a bowl add the tomatoes and basil and 3 tablespoons of olive oil and toss to cover 5. Add salt and pepper to taste and toss again and set aside. 6. Place nuts into a skillet and toast over medium high heat and toss until golden brown and set aside 7. Slice onions into 1 inch thick size and brush with olive oil, salt and pepper 8. Brush both sides of each tilapia fillet, salt and pepper and squeeze lemon juice over fish 9. Place onion slices on the grill and cook until charred but soft about 6-8 minutes 10. Wrap fillets in tin foil and seal 11. Place on grill and cook 4 minutes on each side 12. Place fillets on plates and spread the tomato mix, toasted pine nuts and onions on top and serve Serves: 3-4 |
