Chili Rubbed Tilapia with Asparagus and Lemon 2 pounds asparagus 2 tablespoons Chili Powder Mild 1/2 teaspoon Garlic Powder 1/2 teaspoon Sea Salt, divided 1 pound tilapia 2 tablespoons olive oil 3 tablespoons lemon juice 1/2 teaspoon Lemon Peel Directions: 1. In a large saucepan bring 1 inch of water to a boil 2. Trim the tough ends off the asparagus and cut into 1-inch pieces 3. Put asparagus in a steamer basket cover and steam until tender-crisp about 4-5 minutes 4. Place steamed asparagus on a plate and spread them out to cool 5. Combine chili powder, lemon peel, garlic powder and 1/4 teaspoon salt on a plate 6. Dredge fillets in the spice mixture to coat 7. In a large skillet over medium high heat add oil 8. Add fillets to skillet and cook 5-7 minutes turning once 9. Check doneness by flaking with a fork 10. Place cooked tilapia on four warmed plates and sprinkle lemon juice, remaining salt 11. Add asparagus to the skillet and cook 2-3 minutes while stirring to coat the asparagus 12. Serve asparagus with the fillets Serves: 4 |
