Cajun Chicken
3/4 cup and 2 teaspoons vegetable oil 2-1/2 teaspoons Cajun Seasoning Mild Heat 2-1/2 teaspoons Italian Seasoning Powder 2-1/2 teaspoons Lemon Pepper Garlic Powder to taste 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness Directions: 1. Mix oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper in a large shallow dish 2. Place the chicken in the dish turning to coat with the mix 3. Cover, and refrigerate for 1/2 hour 4. Preheat grill for high heat 5. Lightly oil grill grate 6. Drain chicken discarding marinade 7. Place chicken on hot grill and cook for 6 to 8 minutes on each side or until juices run clear Serves: 4 |
