Thai Green Curry Chicken
1 tablespoon soy sauce 1 tablespoon flour 1lb skinless boneless, chicken breast, 1 inch diced 2 tablespoons cooking oil 2 tablespoons Green Curry Paste 2 green onions, chopped 2 large garlic cloves, peeled and chopped 1 teaspoon fresh ginger, peeled and chopped 2 cups coconut milk 1 tablespoon fish sauce 1 tablespoon soy sauce 1 tablespoon brown sugar 1 cup green peas 1 cup red bell pepper, chopped 1/2 cup bamboo shoots 1/4 cup fresh cilantro Directions: 1. Marinate diced chicken in soy sauce for 10 minutes. 2. Coat chicken evenly with flour. 3. Heat oil in large skillet over medium heat and cook chicken until browned, about 5 minutes. 4. Remove chicken from skillet. 5. Add curry paste to skillet and cook for 1 minute until fragrant. 6. Stir in onions, garlic and ginger and cook 2 minutes. 7. Return the chicken to the skillet and stir to coat chicken with sauce. 8. Stir in coconut milk, fish sauce, soy sauce and sugar. Simmer for 10 minutes. 9. Stir in peas, bell pepper and bamboo shoots and simmer an additional 10 minutes or until chicken is tender. 10. Serve over rice and garnish with cilantro. Serves: 4 Prep Time: 1 hour |
