White Bean and Turkey Chili
White beans are a nice compliment to turkey and chicken when preparing chili, soups and stews. There are many varieties of beans to choose from, cannellinis, great northern, navy and even garbanzo beans. You can really use these beans interchangeably so feel free to adapt this recipe to your tastes or what is available in your market.
I really like to prepare my beans from scratch - I think the taste and texture is so much better and I have control over salt and preservatives. However, beans from scratch take time and there is nothing wrong with using beans from a can as long as you rinse them well in a colander before adding them to you dish.
If you decide you like white beans, I would recommend making a large batch and freezing them in smaller portions so that you have them on hand for these types of recipes.

Ingredients:
Directions:
- Over medium-high heat, heat oil in a Dutch ove
- Add onion and sauté for 10 minutes
- Add next 3 ingredients and saute for a few minutes
- Add oregano and beans, stir
- Add broth turn stove down to simmer and cook 20-25 minutes
- Take 2 cups of the mixture and put in a blender and process just until it’s smooth
- Return to pan and add the turkey and cook until fully heated
- Remove from heat and add tomato, cilantro, lime juice, salt and pepper stir well until all is mixed
- Serve with lime wedges on the side
