Italian Sausage
3 pounds ground pork 3 cloves garlic, minced 1/4 teaspoon Dried Sweet Basil 1/8 teaspoon Dried Mediterranean Oregano 1/2 teaspoon Dried Rosemary Leaf 1 tablespoon Fennel Seed , roasted and crushed 1/4 cup dry white wine 1/2 teaspoon Sea Salt 1 teaspoon fresh Ground Black Pepper Coarse Grind 1 teaspoon Red Pepper Flakes Directions: 1. Place ground pork in large bowl and add seasonings. Mix by hand. 2. Add wine and mix well. Notes: 1. Sausage can be made into patties or run through a sausage-stuffer into hog casings. 2. Sausage can be frozen. Yield: about 3 pounds. |
