Thai Grilled Pizza
1/4 cup fresh lime juice with pulp 2 tablespoons soy sauce 2 tablespoons minced green onion 1 tablespoon minced fresh cilantro 1 tablespoon crunchy peanut butter 1 tablespoon olive oil 1 tablespoon brown sugar 1 teaspoon minced Crystallized Ginger 1/2 teaspoon grated lime zest 1/4 teaspoon Red Pepper Flakes 2 cloves Granulated Garlic 2 cups grilled chicken shredded 1 10-ounce tube refrigerated pizza dough As needed olive oil 1/2 cup sliced green onion 1 medium carrot cut into match sticks 1/4 cup chopped fresh cilantro 1/2 cup Mozzarella cheese grated Directions: 1. Prepare grill for indirect-heat cooking 2. Add lime juice, soy sauce, onion, cilantro, peanut butter, oil, brown sugar, ginger, lime zest, red pepper flakes and garlic to a pan 3. Stir in chicken 4. Heat over low heat stirring often 5. Unroll pizza dough and pat into a rectangle, approximately 10 x 13 inches and cut dough into 4 equal pieces 6. Reduce heat to low 7. Brush grill rack with olive oil 8. Set the grill to indirect grill 9. Place crusts on to grill and cook 4 minutes or until dough is puffy a light brown 10. Turn crusts over 11. Top with chicken mix 12. Sprinkle green onions, carrot sticks and cilantro on top 13. Sprinkle on cheese 14. Cover grill and heat for 5-6 minutes or cheese melts and pizza is hot Serves: 3-4 |
