Smoky BBQ Chicken Pizza
BBQ Chicken + Pizza = Yum!
We firmly believe that just about all of our favorite foods can be great toppings for homemade pizza. This BBQ Chicken pizza has the sweetness of BBQ sauce and the rich smoky flavor of Gouda cheese (don't tell the kids they'll never know). We cooked the chicken ahead of time in the slow cooker and assembled the dish quickly for a simple and easy alternative to Friday night take out.
If you have the time, it is worth making your own pizza crust, with our Whole Wheat Pizza Dough recipe, but if you are looking for quick and easy - a prepared pizza crust works just dandy.

Ingredients:
- 1 pizza crust - we used a large Boboli whole wheat crust.
- 1 large boneless/skinless chicken breast, about 10 ounces
- 3 Tablespoons jar BBQ sauce - look for low sodium and low sugar.
- 1/2 cup smoky shredded Gouda cheese
- 1/4 cup red onion, thinly sliced
Directions:
- Cook chicken in the BBQ sauce. I put mine in the small slow cooker and shredded the slow cooked chicken. You could also dice the chicken and thoroughly cook the chicken on the stove in about 1 Tablespoon olive oil - add the BBQ sauce once chicken is cooked. Continue cooking until chicken and sauce are heated.
- Preheat oven to 450 degrees and place pizza stone in oven to preheat. Pizza stone is optional - but it really makes for a nicely cooked pizza.
- Assemble chicken, cheese, and onions on the prepared pizza crust. Drizzle a small amount of the BBQ sauce on top of the cheese.
- Transfer pizza to the pizza stone. I use a cutting board that is lightly dusted with cornmeal and slide my pizza right onto the warmed pizza stone.
- Bake at 450 about 10 minutes until crust is heated through and cheese is melted.
