Chicken Fajita Grilled Pizza
1 lb. boneless skinless chicken breasts 1 large red onion sliced 2 tablespoon vegetable oil 2 large poblano peppers 2 (12-inch) prebaked pizza crusts 1-1/2 cups pasta sauce 1 teaspoon Pizza Seasoning 3 cups shredded Monterey Jack 2 tablespoons chopped fresh cilantro Sea Salt to taste Cracked Black Pepper to taste Directions: 1. Lightly coat chicken and onion with oil, then season with salt and pepper 2. Grill chicken, onion and peppers, turning once, until chicken is thoroughly cooked and vegetables are tender 3. Wrap peppers in aluminum foil and let sit for 5 minutes 4. Remove skin and thinly slice and set aside 5. Thinly slice chicken and set aside 6. Grill top side of pizza crusts about 1 minute and remove 7. Spread pasta sauce on the crusts and then top with chicken, vegetables and cheese 8. Place crusts back on the grill and grill covered until cheese is melted 9. Sprinkle cilantro on top and serve Serves: 4-6 |
