Blackened Chicken
1 tablespoon Sweet Spanish Paprika 4 teaspoons sugar, divided 1-1/2 teaspoons Sea Salt 1 teaspoon Garlic Powder 1 teaspoon crushed Thyme Leaf 1 teaspoon Lemon Pepper 1/2 teaspoon Lemon Peel 1 teaspoon Cayenne Pepper Medium Heat 1-1/2 teaspoons Cracked Black Pepper, divided 4 boneless skinless chicken breast halves 1-1/3 cups mayonnaise 2 tablespoons water 2 tablespoons cider vinegar Directions: 1. Add paprika, I teaspoon sugar, 1 teaspoon salt, garlic powder, thyme, lemon-pepper, lemon peel, cayenne and 1 teaspoon pepper to a small bowl and stir 2. Set aside 3. In a 2nd bowl add the mayo, water, vinegar and the rest of the sugar, salt and pepper 4. Mix and cover and refrigerate 1 cup 5. Set the grill to medium heat 6. Place the chicken on the grill and close the cover basting often with the remaining sauce 7. Cook for 6-7 minutes on each side or until there is no pink 8. Serve with the reserved sauce as a side Serves: 4 |
