Low Sodium Baked Salmon with Asian Marinade
Sodium = 174 mg Cooking spray 1/2 cup pineapple juice 1 quart Garlic Flakes 1 teaspoon low sodium soy sauce 1/4 teaspoon Crystallized Ginger grated 2 salmon fillets, each 4 ounces 1/4 teaspoon sesame oil Ground Black Pepper Medium Grind to taste 1 cup diced fresh pineapple Directions: 1. Add pineapple juice, garlic, soy sauce and ginger to a bowl and mix well 2. Place salmon in a baking dish and pour pineapple mix over the fillets 3. Place in refrigerator and marinate up to several hours, turning fillets occasionally 4. Preheat oven to 375 F 5. Lightly coat 2 squares of tin foil with cooking spray 6. Place fillets on the foil and drizzle each with sesame oil 7. Sprinkle pepper over fillets and top each with diced fruit 8. Wrap foil around the salmon and fold the edges to seal 9. Bake about 10-12 minutes on each side or until it passes the fork test and flakes 10.Serve on warm plates Serves: 2 |
