Considered by many experts to be the most popular of all the chiles the Ancho Chile Pepper is actually the dried version of the Poblano pepper and has a well established reputation as the Chile Rellenos, a favorite Tex-Mex dish. Anchos have a deep, reddish brown to black color with a mild fruity flavor with a hint of plum, raisin, tobacco and a slight earthiness, with medium heat (about a 3-4 on a heat scale of 10).
