Like many herbs, Sage has origins from the mint family. Our Organic Rubbed Sage is harvested in both Argentina and Europe depending on the quality of the source and the price throughout the year. Cut and sifted sage is normally used when the cook wants the flavor of sage to be more apparent in the finished dish.
Rubbed Sage is unique among herbs as it goes through a minimal grinding process and then is passed through a coarse sieve. The end result is a fluff product that looks like puffed cotton balls. Rubbed Sage is more common than cut and sifted sage. Rubbed Sage has a pungent aroma and a warmly spicy flavor but should be used in small quantities. Most frequently used in stuffings for chicken, duck, goose and in the US is widely popular in Thanksgiving turkeys. It is also frequently used in the making of sausage. You can also use with beans, onions and tomatoes. Works well in combination with bay, caraway, ginger, marjoram, paprika, savory and thyme. |
