This tree, Myristica Fragrans, bears an apricot-like fruit. In side this fruit is the seed which is the Nutmeg covered protectively by the aril, a reddish thin, lacy-looking shell that is known as mace. Once the mace is separated from the nutmeg and dried, its scarlet coloring turns a light brown. We have chosen to go with the Organic Mace from Sri Lanka as the cost is almost identical to the non-organic version. In many places around the globe cooks use nutmeg in recipes calling for mace as the taste is very similar. Nutmeg is also a bit more popular due to it being a bit less expensive but many cooks prefer mace when looking to maintain the color of a dish. Mace has nutmeg’s warm and rich aroma while the smell is a bit livelier with hints of pepper and clove. While a bit more expensive than nutmeg, many cooks prefer mace when looking to maintain the color of a dish.
