Low Sodium Potatoes Au Gratin
Sodium = 192 4 large onions thinly sliced 1/2 cup light brown sugar 1/2 cup unsalted butter 6 large Gold potatoes, scrubbed and sliced with peel left on Cooking Spray 1 cup heavy cream 1 tablespoon Rosemary Leaf crumbled Directions: 1. Preheat oven to 350º F 2. In a large skillet over low heat add onion, butter and brown sugar and cook stirring frequently until onion have caramelized about 40 minutes 3. Coat a 9 x 13 inch baking dish with cooking spray 4. Place a single layer of potato slices in the bottom of the baking dish 5. Cover slices with a thin layer of onions 6. Drizzle some of the cream on top of the of the layer 7. Sprinkle some rosemary over the layer 8. Repeat this process four times ending with onions, cream and rosemary 9. Bake for 1 hour or until top potatoes are golden brown and the sauce is bubbly Serves: 6 |
