Low Sodium Beef and Beans
Sodium = 66 3/4 cup dried black beans 2 cups cold water 2 cups cold low sodium beef broth 1 teaspoon olive oil 3/4 lb beef short rib, cut up 1 large onion, diced 1/2 celery, diced 1/4 cup Garlic Flakes 1/2 teaspoon Bay Leaf 1/2 teaspoon Sweet Basil 1 tablespoon fresh parsley, chopped 1 large carrot, pared and diced Sea Salt, to taste Ground Black Pepper Medium Grind, to taste 5 cups cold water Directions: 1. In a saucepan, add beans, 2 cups water and broth 2. Bring to a boil over medium heat 3. Boil 10 minutes 4. Remove from heat and allow to stand for at least one hour 5. In a large saucepan heat oil over medium head, add short ribs and sear for 4-5 minutes 6. Add onion and celery to meat pan, stir well and cook for 5 minutes 7. Add garlic, seasonings and carrot 8. Drain beans and add to saucepan 9. Add 5 cups cold water stir and bring to a boil 10. Cover partially and cook for 1 1/2 to 2 hours over medium heat 11. Stir occasionally Serves: 6 |
