Low Sodium Shrimp and Snow Peas with Rice
Sodium = 57.9 mg 1/2 cup uncooked long-grain rice 1 tablespoon water 2 tablespoons white wine vinegar 1 tablespoon sesame oil 1 teaspoon white sugar 16 medium shrimp, shelled 2 teaspoons olive oil 10 unsalted quartered walnuts 18 snow peas, trimmed 1/2 cup crushed pineapple (canned) Directions: 1. Prepare shrimp or buy peeled, deveined store in refrigerator 2. Steam rice 3. Using a nonstick skillet, add olive oil over medium-high heat until the skillet is hot 4. Add snow peas for 40 seconds stirring constantly until they are crisp and tender 5. Remove the snow peas to a bowl 6. Add shrimp to skillet and cook 1 minute on each side 7. Add pineapple to skillet and cook uncovered for 1-2 minutes 8. Add shrimp mix to snow pea mix 9. Add rice to bowl and add the wine vinegar, sesame oil and sugar and toss until all is blended 10. Scatter the walnuts on top and serve Serves: 2 |
