Chicken and Sausage Jambalaya

You're constantly seeing on your favorite cooking show all of this talk about comfort foods - macaroni and cheese this and meatloaf that... Well having spent several years in the Crescent City I can tell you that we developed a love for this dish as one of our go-to comfort foods. This is a classic New Orleans dish, with just a little modification to make it lower in fat and salt. This allows us to enjoy the tastes of the Big Easy with this super easy one pot dish without feeling the least bit guilty.

So if you're looking for a healthy high protein, low carb dish to celebrate Mardi Gras or if you just crave some Cajun comfort food you can't go wrong here! Put on some Naw'lins jazz, relax and let the sounds and aroma of this meal carry you away to this jewel of the south. Oh and the Mardi Gras beads are optional!

Ingredients:

  • 8 oz turkey sausage cut in 1 inch pieces
  • 2 boneless, skinless chicken breasts (about 12 oz)
  • 1 tablespoon olive oil
  • 1 cup sweet onions, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup red or green bell pepper, chopped
  • 2-3 cloves garlic, chopped
  • 1 28oz can whole tomatoes with the juice (no salt added)
  • 2 cups water
  • 1 cup dry rice - I like to use brown rice, but white is ok if you prefer
  • 2 teaspoons cayenne pepper
  • 2 Bay leaves
  • 1/2 tablespoon Worcestershire sauce

Directions:

  1. In a dutch oven, on medium high heat, add olive oil
  2. Add chicken and turkey sausage, cook until browned - take meat out of pot and set aside
  3. Add onions, peppers and celery - saute until tender
  4. Add garlic, saute another minute or two - just don't burn the garlic
  5. Add meat back to pot, add tomatoes, water, rice, cayenne pepper, bay leaves and Worcestershire sauce
  6. Cover and simmer 20-25 minutes
  7. Remove bay leaves before serving, garnish with dried or fresh parsley
