This is our Organic Green Peppercorn that we have sourced after several of our organic customers have been requesting it. Green peppercorns have become a highly sought after gourmet pepper with their mild yet distinct flavor. They are not as robust in flavor or have quite the distinct bite as the more common black peppercorn. The flavorful journey of the Green Peppercorns begins with the harvesting of the green fruits before they reach full maturity. These delicate berries come from the same vine that produces the more popular black peppercorn. These freshly picked, unripened peppercorns are placed in boiling water, treated with potassium sulphite, and are then either frozen or dehydrated. The potassium sulfite is an oxidase inhibitor that prevents the blackening in color from the oxidation that normally is catalyzed by that enzyme.
