Thai Chicken and Vegetable Stir Fry
A wonderful tasty meal with a kick of heat this Thai Chicken Stir Fry is packed with nutrients, gives you several servings of vegetables and is a low sodium meal to boot! We also like it because it is ideal for those watching their weight as it is filling but not loaded with unhealthy fats. 2 tablespoon peanut oil 4 chopped garlic cloves 1 1/2 lbs raw diced chicken breast meat 1/2 cup diced red onion 1/2 cup diced red bell pepper 1/2 cup diced yellow bell pepper 1/2 cup sliced mushrooms 1/4 cup broccoli pieces 1/4 cup cauliflower pieces 1/4 cup chopped carrots 1 tablespoons Ginger Powder 1/4 cup Thai Spice 1/2 cup Thai peanut sauce 1/4 cup water 3 cups cooked rice Pinch of Red Pepper Flakes Pinch Sesame Seed Directions: 1. Heat wok (or skillet) over high heat for 2 minutes 2. Turn down heat to medium high and add sesame seed oil, ginger, Pepper flakes, garlic and chicken, saute for 3 minutes (or until chicken is no longer pink) 3. Add Thai Spice and saute for 1 minute 4. Add remaining vegetables and continue stirring for 5 minutes 5. Add peanut sauce and water and cook for 1 minute, mixing well 6.
