Thai Basil Pork Stir Fry 1 pound boneless pork tenderloin, sliced across the grain into 1/4-inch slices 1/2 teaspoon minced garlic 1 tablespoon light soy sauce 2 tablespoons canola oil 1 pound bag ready-to-use fresh broccoli florets 1 medium red bell pepper, cut into strips 1 to 2 tablespoons Green Curry Paste 1 1/4 cups chicken broth 2 tablespoons finely chopped roasted peanuts 3 cups fresh Mung bean sprouts 2 tablespoons Thai Spice Directions: 1. In a small bowl combine pork, Minced Garlic and soy sauce toss to mix and set aside 2. In a 12 inch nonstick skillet over high heat, heat oil and add broccoli and stir fry 4 minutes until slightly brown 3. Add bell pepper and stir fry for 1 minute 4. Add pork and curry paste stir fry for 3 minutes 5. Add chicken broth and Thai Spice cook while stirring for 3 minutes 6. Serve warm sprinkling chopped peanuts into the servings 7. Serve each bowl with ½ cup bean sprouts on the side Serves: 6 Prep Time: 18 minutes |
