It is a key ingredient in several five spice mixtures – the very well known and popular Chinese FiveSpice Powder (where it is used predominantly with poultry and fish) as well as the less recognized Bengali Five Spice, also known as Panch Phoron, that originates from northeastern India (which is used primarily with beans and vegetables).
Fennel is good with a very wide variety of dishes and is exceptional with beets, potatoes, in sauerkraut, stews, meat and chicken dishes, sauces, herb butters, dips and dressings, salads, omelets, apple pie, cakes, pastries, puddings, and spiced fruit. Works well in combination with cinnamon, cumin, fnugreek and Sichuan peppercorns.
