Spice Blend Storage
Where do you keep your spice blends? While some folks prefer to keep their spices and blends above the stove for convenience it is really not the best place to store them. This is due to flavor of spices, herbs and blends will begin to break down when they are exposed to light, moisture and heat. The best storage temperature for your spices, herbs and blends is one that remains fairly steady and the closer to 70° F the better. So for the best flavor and longest shelf life you should store these away from the heat of the stove, direct sunlight or the kitchen heater. A good storage system keeps your spices, herbs and blends in the dark, dry and without fluctuating temperatures. Some folks also like to use amber glass jars with airtight lids for this reason. You may find it easier to keep them in a cupboard or drawer (as long as the temperature in the kitchen stays relatively cool) but you should still make sure that they are not exposed to light. Significant temperature fluctuations may cause unwanted condensation, caking and possibly even mold, so if you are one of those that prefer to keep your spices in the refrigerator then you should return them there shortly after using. |
